Continuing on with the holidays, I thought I’d look into a great starter option. Other than hors d’oeuvres, salads and sides, a great dish to have is a nice hearty soup.
This Roasted Cauliflower Soup with Cheddar Crostini is a great vegetarian-friendly accompaniment to any main dish.
What makes this dish extra hearty, is that instead of using croutons, it takes bread and cheese to the next level. The mustard also adds a a bit of a kick of flavour, as well.
Cauliflower is a healthy option, as it’s a great source of vitamin C, vitamin K, vitamin B6, as well as dietary fiber and omega-3 fatty acids.
I’m aware that some people are not fans of cauliflower, but roasting it does wonders to the flavour! The same goes for many other vegetables like broccoli, brussels sprouts and squash.
